After removing meat from rotisserie chicken, place bones, skins, and scraps in slow cooker.
Add chopped vegetables, spices, and water.
Cover with lid and allow to simmer on high heat for 6-8 hours (or turn to lower heat for longer amounts of time).
Turn off heat and allow to cool for at least 30 minutes.
Place strainer/sieve over a large bowl or pot. Pour liquid from slow cooker, through the strainer, so that the strainer catches vegetables/bones and you are left with the chicken broth.
