Gluten-Free Double Chocolate Banana Bread

Ingredients

  • 1 cup All-Purpose Gluten Free Flour we used King Arthur brand
  • 1 36 g scoop Vanilla or Chocolate Protein Powder ~1/2 cup measured; OR substitute 2 Tbsp Cocoa and 1/4 GF Flour *
  • 1/2 cup Dutch Cocoa Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Sea Salt
  • 3-4 large brown Bananas  
  • 1/3 cup Apple Sauce
  • 1/4 cup Canola Oil or melted Coconut Oil
  • 1/2 cup packed Stevia Brown Sugar or ¼ c honey + ¼ c Maple
  • 2 large egg at room temperature
  • 1-2 teaspoons pure Vanilla Extract
  • 1 cup semisweet or dark chocolate chips divided

Instructions

  • 1. Heat your oven to 350°F.
  • 2. Beat bananas in stand mixer until creamy.
  • 3. Add eggs one at a time, along with the applesauce, oil, vanilla, and sugar.
  • 4. Add other dry ingredients, mixing after each addition.
  • 5. Add chocolate chips! (Keeping a handful out to sprinkle on top before baking)
  • 6. Pour into well-greased pan of choice: 9-by-5-inch loaf pan (bake ~60 minutes) or Muffin tins (bake ~20 minutes) or an All-crust loaf pan like we used (bake ~30 minutes)
  • *Monitor your baking time based on the above chart, checking banana bread with a toothpick for doneness.
