Homemade Slow Cooker Chicken Broth


  • 8 c Water
  • 1 Medium Onion coarsely chopped
  • 3-4 Celery Stalks coarsely chopped
  • 2 Large Carrots coarsely chopped
  • 2 tsp Garlic Powder
  • 1/2 tsp Crushed Red Pepper
  • 1-2 Bay Leaves
  • 1 tsp Italian Seasoning
  • 1 1/2 tsp Salt or to taste
  • 1/2 tsp Black Pepper freshly ground
  • 1/2 tsp Adobo Sauce optional
  • 1 Rotisserie Chicken Carcass bones, scraps, and skin only - see this recipe to make your own rotisserie style chicken in the slow cooker!


  • After removing meat from rotisserie chicken, place bones, skins, and scraps in slow cooker.
  • Add chopped vegetables, spices, and water.
  • Cover with lid and allow to simmer on high heat for 6-8 hours (or turn to lower heat for longer amounts of time).
  • Turn off heat and allow to cool for at least 30 minutes.
  • Place strainer/sieve over a large bowl or pot. Pour liquid from slow cooker, through the strainer, so that the strainer catches vegetables/bones and you are left with the chicken broth.
  • Voila!
